Fix center spelling #351

This issue is to conform to project standard of AU spelling, including areas of settings / command line arguments / etc.

Specifically center has been identified in various places, this needs to be refactored to centre

I suppose we're stuck with the US spelling in the param files, but everywhere else should be fair game :-)

We can change the param files too, we haven't deployed any major version yet - we just need to do it before anything goes into ops / before we make a long term support / "1.0" release :)

I changed polarization -> polarisation in the config files (and command line args) last month, no reason we shouldn't do it for this as well - just need to do it before a release we intend to support longer term.
