small dockerfile additions

• [x] bumped openjdk:8 <-> openjdk:16
• [x] replaced jre-slim with alpine
• [x] added easier setup instructions

Dockerfile no longer exists as the Geyser docker file should work in its place due to GeyserConnect not needing to be updated as often.
