Change name to VAE-AM #10

As result of the review, the name should be changed from VA-AM to VAE-AM, for the sake of clarity. Anyway, this means a lot of refactor, as well as a change in PyPI and Conda. While PyPI looks easy and suitable, change Conda pkg name looks harder.

[ ] Think about a new logo
[ ] Change project name in GitHub
[ ] Change project name in Documentation (`./docs/ folder and web page of pkg)
[ ] Refactor all code and folders
[ ] Change pkg name in PyPI
[ ] Change pkg name in Conda
