[CODE ORGANISATION] - Use single `main` branch instead of branches for each MC version #200

Maintaining more than 1 branch is becoming very painful. Having each MC version's code on 1 branch would be easier to maintain and version control.

Need to look at what other carpet addon mods have done as they take this approach.
