Transcribe docs, removing screenshots #730

This PR partially addresses #9. It removes screenshots from another three of the documentation files, adding a (provisional?) solution to format the charts and other report output where necessary.

After learning more about ANSI escape sequences, I put together a more general solution. This PR now handles all of the remaining docs in #9.
