Is there any comprehensive documentation of mod_wsgi express command line flags? I find myself needing to dig into code every time that I need to configure something.

You can run mod_wsgi-express start-server --help rather than needing to dig through the source code. Right now there is no separate documentation, but options in the main wrap options from mod_wsgi core configure, so you can find some more in depth information about things in specific pages under:
