Our definitions:

Pending: transaction that has been gossiped and buffered in mempool
Canonical: transaction/block on the best chain, and can even include the most recent block
Finalized: transaction/block has > k (=290) confirmations

This is not merely a documentation issue. There is code in which the term 'canonical' is not being used according to our definition. Or, there was, at the time that this issue was created. I am removing the 'docs' label.
