Add summary to landscape sustainability doc #687

Hi,

We are putting together a landscape doc for CNCF Environmental Sustainability TAG. Would be nice to have a summary on this project here.

Probably more brief than we'd like. Here is an example of a summary by geopm (not merged yet, as it is in progress). https://github.com/catblade/wg-env-sustainability/pull/7/files

Also please be aware we will be editing for voice, to make sure the doc reads consistently.
