Upgrade to swift-nio 2.0.0 #51

This is PR upgrades GraphQL to use swift-nio 2. I was not able to use the package because some of my other dependencies require swift-nio 2. The was my motivation to upgrade the package to use swift-nio 2.

@sjama If you rebase your PR, it should now pass CI tests
