Fix Unknown option .rootDir #28 / Bring gatsby 2.25.0 compatibily #29

I investigated #28 I tried to align a few files from this repo: https://github.com/prismicio/gatsby-source-graphql-universal and bump a few packages versions.

Also, I removed babel-plugin-remove-graphql-queries file to use the plugin from gatsby's repo. I am not sure of these changes, frankly, if ever @NathHorrigan, you could take a look ?

Also, @tbrlpld, could you please try my branch and tell me if this solves the issue for you ?
