Update Jenkins Pipeline #238

Making the following changes to the Jenkins Pipeline:

Setting it up to be triggered manually with parameters
Branch parameter now autopopulated. No more manually editing the list.
Get the AMI stage working.
Update nokogiri to 1.10.8.
Update iso_checksum in templates to work with Packer 1.6.0.
add 'eu-north-1' region for #235

This started off with me adding a few commits to the master branch of the main repo. As I started to realize how many changes I was making, I decided to make a proper PR. In order to get the pipeline running in the new Jenkins environment (under Packer 1.6.0), I had to update a few things.
