I see that this issue now has the documentation
label, but this is not necessarily a documentation problem. According to https://docs.graylog.org/docs/installing#system-requirements, MongoDB 3.6, 4.0, 4.2 and 4.4 are supported. For Debian Bullseye, MongoDB supports only 6.x and 5.0.8+ (see: https://www.mongodb.com/docs/manual/administration/production-notes/#platform-support-matrix).

This seems obsolete and I guess this can be closed - documentation mentions Bullseye as compatible by now.

Graylog Server should be compatible with Debian Bullseye.
Why?
According to https://docs.graylog.org/docs/installing#system-requirements, Graylog Server is compatible with Debian 8, 9, 10. All of these versions are EOL.
