I don't own this game; will need someone with it to confirm if this is a macOS-exclusive bug
Managed to test on another computer. The rendering of clouds in the background is the same (see attached screenshot 1). Close clouds appears to render partially as a mix of dots / lines (screenshot 2) Plane engines are rendering correctly.
Launch the game, start the first mission after the runway and take section, past the first airplane to destroy.

Description of the issue
Observed in the first mission. Clouds are rendered as should be during the runway sequence at the start of the mission. After that, the sky display a kind of vertical limit resulting in a flat line atop of clouds in the background (attached screen). Volumetric clouds appear bugged with "empty pockets" as in attached screenshot.
At low speeds, the engine exhaust appears as white. Render is corrected when accelerating, showing the engine exhaust animation (also exhibited in the screenshot).
Bug observed using the latest release at this date on macOS. Not tested with on other systems for reproducibility.
Can provide screenshot from a physical version for comparison if needed.
