feat: add time series panels to flight demo #42

Add velocity and altitude time series chart. It is controlled by the lat/lon/h3 resolution variables. The idea is to demo that we can show flight data when it's at given location.

looks sweet! i just added a range on the velocity gauge to have a bit better visual
