I think it partially addresses #86 also, but I'm not sure it fully covers the GREASE suggestion.

general comment: we might benefit from saying what to do with the spare fields. For example, RFC 9113 says "Unused flags MUST be ignored on receipt and MUST be left unset (0x00) when sending."
