Update docs to be up to date, nicer to use, & more consistent

This PR:

• [x] Adds dark mode toggle

• [x] Adds proper code blocks with syntax highlighting
  • 
• [x] Fixes way too many typos and consistency issues

This took longer than I'd be willing to admit.

You can compile the docs by cd documentation; make build or by directly doing cd documentation; python3 -m mkdocs build.

Note that the below link is no longer up to date ~~The static site download is here: site.zip~~

Also did a bit more customization by adding the favicon and icon.
