In note with mixed text and images, highlighting text for selection simple reverts back to non-selected. End result is you cannot select / highlight text and have that section "stick".
Deleting note and creating anew results in the same behavior.
Poked around a bit and think I found the issue. I have a piece of text "Disable FTP", where the FTP is highlighted:
If I remove the "FTP" text, the note's text can now be selected as normal.
