I'm not sure what I was doing wrong here but this is the only way I could get the mocked prefabs to work, I think to fix this issues I would need to make new assets as a unity package, something I have been avoiding so far.
If you know a better way to change the UV maps with Jotunn mocked prefabs please let me know
Textures load with incorrect UV coordinates, UV's are overlapped -crusader capes load only half the texture, boar/neck capes load split horizontally
most capes load odin cape bump map which affects diffuse textures (possibly all? cant tell on boar/troll/feather hide base capes)
massive amount of texture space wasted, cut texture size to fit or remap UV to use entire space, wasted space is wasted memory or include colour styles for all capes
