This feature depends on your network. Some networks require you to dial a number before each call. Others have it as a setting that you need to activate with your operator. Some networks do not allow hiding your number at all.
No I'm 100% sure that it's possible to hide the number at all networks there is also another way to do it by just writing #31# in front of the dialed number (this works in most networks worldwide, more info here: https://www.techbout.com/disable-hide-caller-id-on-iphone-9312/). In the preinstalled Google Phone it is possible to hide your number in the settings for all networks, but you have probably not seen that setting yet.
Could you ad an optional "Hide number" setting in Emerald Dialer? So the user can make calls without showing his/her phonenumber, when the setting is activated.
