Hermes cuts out after each song ends streaming thru Airport Express (V2) linked to my stereo system. Checking the Sound Preference Pane shows that the sound output for Airplay switches from my selected Airport Express to my Apple TV. If I switch back from Hermes to using the Pandora One app, everything works fine.

MBP 2012 (non-retina)/16gb ram/1tb HD/OS 10.10.1

This is an OS X bug and/or specific to your situation — nothing to do with Hermes. Hermes doesn't manipulate the selected audio output device. (FWIW, I play Hermes to my AirPort Express frequently without problems.)
