Refactor of Data-Logger

DLogger is not in good shape. Roger to refactor to bring to a polished state that does what we want it to.

Primary:

• easily set the frequency of sensors
• get what we need from said sensors

Looking to have results this afternoon, but having some back and forth

• figured out where the queues and reads happen
• should be able to get something good soon.

2 PRs:

• Data logger cleaning
• IMU changes (configurable frq): Output data in docs.go can now be set

Magnetometer not yet touched:

• Mazar set to pull for data (not great for stable sampling periods)
• Interrupt version not available for I2C, only I3C

Particular Frq: 100Hz (Roger's preferred, already set)

• Match Sensor Axiis
• Then drive test
