After examining the output of brew cask outdated on my machine and going through the various apps, here are the ones that can actually update themselves:

Do these all self-update, i.e. they don't direct the user to a website to download it again?

You can add spotify to that list as well. In Spotify's about dialog, I just saw a "restart to update" message.

That is correct. Almost all of them use sparkle to be more specific.
