This better matches the formulae in homebrew/core.

This does make the build slower (by about 10 minutes on 10.11 it seems?) because we're introducing four new dependencies here that all in themselves need building from source. Honestly not sure why homebrew-core uses the git tag - seems like a mistake unless you found the reason, but the trade off does not seem worth it for Portable Ruby builds.
