Rename vignettes #5

It may make more sense to have topic names, rather than "class" describing the vignettes. This also allows easier understanding of different versions -- ie, plotting-1 vs plotting-2 -- and instructors to change the class ordering.

However, the classes have been structured, at least somewhat, as progressive. When the names are changed the README should be updated with the suggested class order (and the number of sessions to spend on each class).

Proposed filenames (name for the title, eg. HTLTC-R: ""):

class 1: operators (Operators)
class 2: structures (Data structures)
class 3: plotting-1 (Plotting)
class 4: control (Control statements)
class 5: functions (Functions)
class 6: package (Reproducible research & packages)

Once plotting and IO are broken out (#6) we can use io (Reading and writing data)
