Mediasoup bump to 3.6.37

Our existing version is pointing at this commit https://github.com/versatica/mediasoup/tree/22d5d18d9b676f276cf1cff055d2c51ca2784ac4. Looks like thats 3.6.0 so we should review the changelog since then: https://github.com/versatica/mediasoup/blob/v3/CHANGELOG.md

@netpro2k I haven't seen anything that caught my attention in the changelog so I'm going to push this to prod tomorrow along with the hubs bump.
