Refactor general gridding into aneris #70

Disentangles VariableDefinitions from the rest of the gridding module, which allows moving the core logic into a new grid module in aneris.

Depends on companion PR over there: https://github.com/iiasa/aneris/pull/77 (which was merged into #workflow)

And already assumes the proxy is proportional to fluxes convention change, introduced in #69 . ~(Therefore we take that as merge base, needs to be merged as a chain)~ Update: Switched back to main.

@coroa - I merged fix-gridding-proxy-fluxicity just now without realizing this PR built on top of it. shall we change the base for this back to main and merge?
