To run, we need:

a zarr version of the DestinE SST dataset (originally in grib format) with chunk sizes of {"oceanModelLayer": 1, "values": 100000} (and some more metadata)
xdggs from the grid info PR

The result of the plotting will be: comparison_smoothing
