refactor(notebooks): rename scaling to scaling-sampler

Summary

As we expect a new scaling demo to be ready in the next weeks (#28) using EstimatorV2 directly instead of SamplerV2, this PR renames the original scaling path to scaling-sampler ~and adds symlinks for support of the old names~.

• scaling directory renamed to scaling-sampler
• ~scaling symlink created pointing to new scaling-sampler directory~
• scaling.ipynb renamed to scaling-sampler.ipynb
• ~scaling.ipynb symlink created pointing to new scaling-sampler.ipynb~

Symlinks do not seem to work in GitHub, or redirect the URLs. They will only be helpful for navigating the repo locally after cloning it. Under this circumstance, maybe we can just do without them altogether.
