Update Ansible Galaxy links #48

Ansible Galaxy is now Galaxy NG, all the previous link should be updated to this one:
https://galaxy.ansible.com/ui/search/?keywords=ibm_zos*

I just scanned through the entire /source folder. Seems like the Ansible Galaxy link only appears once, where it's used to demonstrate how the ansible-galaxy command works and doesn't not involve the actual link to the IBM z/OS collection.

For that reason, I don't think we have any Galaxy link to update on the doc site and hence will close this issue.
