...not sure how to trigger the docker instance to re-read the environment.yml file...

thanks @espg - the image building happens automatically, but conda is having a hard time with solving for compatible packages (https://github.com/ICESAT-2HackWeek/jupyter-image-2020/runs/729160320?check_suite_focus=true). I've noticed this can happen with ML libraries in particular, will look into a fix...
