Updated definition and summary files to be a "_" before the extension instead of a "." #115

After an issue with the API noted by @jkmusyoka here we should put "_" before a timestamp, not a ".",

e.g.

"annual_rainfall_summaries_zambia_eastern_20240510181254.rds" instead of "annual_rainfall_summaries_zambia_eastern.20240510181254.rds"
