Introduce test matrix #91

This change uses the matrix feature of Github Actions to run the unit tests in a range of different Python environments. Tests will run across Python versions 3.8 - 3.11, and Linux, Windows and macOS operating systems.

Two tests were modified so that they also work in Windows.
