Optimize use of openxlsx package #11

The way we use openxlsx is super slow - we should be able to create a template object with the correct attributes and then edit it manually to add data to it. This should be able to be made significantly more efficient.

This will take some work to get it right. Putting this aside for now - maybe forever?
