spatial functionality to handle more cases

goals for the spatial detection and plotting functionalities:

better detection of spatial variables not named conventionally (e.g. variables not named "lat/lon")
handle cases where the function detects odd combinations of spatial variables. e.g. (x variables, y variables) = (0, 1), (1, 2), (2, 2). Right now we only handle (0, 0) or (1, 1).
Handle non-decimal degrees notations better. Perhaps there is an existing R package for converting between coordinates notations -- I did a brief search during hackathon and did not manage to unearth any.
Often with plot-based studies, spatial information is given in the form of meters east and north from a reference point. It'd be nice if we can handle these cases too.
