Adding docs website with gh-pages #123

This is an adapted version of the mapping document developed in the prep phase. Since we don't have admin rights to the repo, I can't test if it all works currently. Hence, a draft PR.

The idea is to make the mapping document a publish, browsable website and adapting it to reflect the actual ETL as it has evolved since the original document was written.

I'm closing this PR because the documentation website contents now live in the docs branch and is rendered in the gh-pages branch.
