I use 2 templates for that in BIDS matlab: https://github.com/bids-standard/bids-matlab/tree/dev/templates

one for "simple" dataset and it is taken from the starter-kit but has many recommendations on what to put in there
one that also adds the basic content README for datalad datasets taken from the datalad handbook

CHANGES

For CHANGES I have been lazy so far and just add something with the current date: https://github.com/bids-standard/bids-matlab/blob/a8b55c6d8ce60fc030a4fc3097cbfc6f85136037/%2Bbids/init.m#L65
