instrument_deploy.bat: Deploy over multiple days results in backup directories error

Where?

instrument_deploy.bat

How?

I left the backup old directories tasks running Friday evening (26/01/2024) and resumed it on the Monday (29/01/2024), however an error occured when the .bat file tried to verify the backups as it was using the Monday date in the file path instead of the Friday date.

Reproducible?

Yes

To Reproduce

Start the 'Backup old directories' step on one date, and start the 'Verify backups' on another date.

Acceptance criteria

[x] Verifies the backup from the date it was started, not the current date
