Icinga Version: 1.11.1

Currently in the documentation for creating a distributed monitor (http://docs.icinga.org/latest/en/distributed.html) there is no section on adding the 'obsess_over_service 1' option to all services (http://docs.icinga.org/latest/en/objectdefinitions.html#service) that will be sending checks to the central server.

Well, until now I don't see any reason why this should actually be added to the documentation because "obsess_over_host" and "obsess_over_service" is enabled automatically even without enabling the directive in icinga.cfg. Similar to "process_perf_data" you have to DISable it explicitly if you don't want this option to be set in the appropriate object definition. Did you use a package or did you install from source?

And people actually disable it, and are then wondering why it does not work. Since the docs list all settings, that one is missing. Add a note, that this is the default if omitted. But imho the docs are incomplete if you deny on adding it.
