New profiling workflow uses bad runner id #210

Describe the bug

The pyrealm-profiling.yaml qa job runs but the next job (the badly named test) doesn't because it asks for a ubuntu_latest runner rather than ubuntu-latest.

To Reproduce

This run sat for an hour before I spotted it.

Requested labels: ubuntu_latest
