Added image extraction using Google's OCR engine and CV

This should work when including an external image linked from a URI or a local image on the host system.

Also included in this PR:

• Temporary removal of IPv6 test for a single test case (breaks workflow)
• Removed test PyPI deployment for now
• Updated Dockerfile to now include more pip packages and Google tesseract
• Fixed versioning (v1.0.0b -> v1.0.1)
