Various UI tweaks (all of them are optional :))

Clean up Saturn menu and credits
Add togglable input display (from Snowy) [disabled by default]
Add togglable hardcoded saltyhop implementation [disabled by default]
Add togglable v2-ish speedometer (requires extra.kart, graphics by AchiiroMako) [disabled by default]
