Unit 2 Copy Updates #15

I took out the sentence that explains why The Graph needs indexers and what indexers do for The Graph. I figured they would know by the time they get to this Unit. However, I can easily add it back in, if you think it's essential.

It's a more comprehensive layout than Unit 1, so I'm also happy to revisit Unit 1 and make edits :)

I have added new copy for Unit 3 and have made small changes to Unit 1 and Unit 2 to create some continuity across all units. I would also like to go back and capitalize the proper pronoun "Indexers" throughout every Unit Overview, but want to make sure it doesn't create any confusion.

PS. I may continue to make minor changes to the copy for all units to include more clarity and/or information.
