Fix broken links under "Examples of Interest"

gitbook does not support the existing deeplinks in the menu (anymore).

Removing them, as they already appear in the menu on the right-hand side anyways. (see screenshot)

This PR is part of the the resolution of #9.

Again a trivial change that does not change the content but only fixes a but. Going ahead and merging it, to confirm that this does indeed fix the issue as intended.
