feat: enhanced api signature #160

Summary

With the arrival of Eno 'Java', it was the occasion to glow up Eno API:

remove redundant endpoints
review the documentation of the API (swagger ui) based on use cases
slightly change some url paths if necessary (only those that are not used by Pogues)
mark services that are now supported by the Eno 'Java' version as deprecated here

feat(xforms): add multi-model option in standard controller
feat(parameters): improve naming of parameter files
refactor: clean up code there and there
refactor(api): improve logging and exception management
refactor(api): rename endpoints methods and classes
refactor(api): modify parameter and util endpoints urls
docs(api): add 'XML' in swagger ui title
docs(api): improve endpoints description in swagger ui
docs(api): re-arrange tags in swagger ui
docs(api): mark lunatic and utils endpoints as deprecated
chore: bump version to new major version
