Hotfix of github actions YAML files to add env variables for easier change of branches needed to fetch :

For test.yml (crucial to not have the pipeline breaking constantly when ENo and Lunatic dev branch are used)
For ci-docker.yml (in case creating a docker image of a dev branch is needed)
NOT for tag-release.yml, as all releases should only be made from main branch
