Update Github Action files & maven dependencies #79

Adds httpclient provided dependency (Keycloak no longer includes the dependency transitively)
Updates maven plugin versions and test dependencies versions
Updates Github Action step versions and simplify the release step (actions/create-release is no longer maintained)

@clement-dufaure done :) In addition I updated some maven dependencies. And I think that we can plan an update to Java 17 later. (Java 11 is deprecated by Keycloak, still supported for adapter, but we can update to the latest java version I think)
