Mention LTS and latest stable release in IDS-G-pre #525

https://github.com/International-Data-Spaces-Association/IDS-G-pre/blob/main/README.md should reflect the latest state of infomodel maintenance:

that we have an LTS version
that we have a more recent stable version
and that we have work in progress, including the "develop" branch
