Update Cardano-node on test stack

Sanchonet has been respin and new release of node is available.

Acceptance Criteria:

• [x] Update node version in docker stack configuration file to 8.11.0
• [x] Updated version of docker stack is deployed and test stack is ready for use.

out of scope:

• DB Sync is not updated yet. Will be updated after the dev team check
