Documentation: small fixes to install-environments.md #394

Issue description

There were some incorrect "staging" values in the following docs page:

https://islandora-collaboration-group.github.io/ISLE/install/install-environments/#isle-project-structure

The section that lists the various "staging" files and values incorrectly mentions "local".
