[MOB-7489] add prerelease option to iOS SDK automated release #713

✏️ Description

There are times when SDK release is a pre-release. Adding this option to the automated GA workflow.

Also updated project target version number given the warning:

- NOTE  | [iOS] xcodebuild:  Pods.xcodeproj: warning: The iOS Simulator deployment target 'IPHONEOS_DEPLOYMENT_TARGET' is set to 10.0, but the range of supported deployment target versions is 11.0 to 16.2.99. (in target 'Iterable-iOS-SDK-Resources' from project 'Pods')
